I visited this restaurant for the second time, around three years after around its opening time. Even though it was the weekend, there were available seats, and making a reservation seemed easier than before. As far as I know, there has been a change in the chef.
Nkụ specializes in preparing dishes that interpret seasonal Taiwanese ingredients in a modern way. Therefore, if you are looking to experience Taiwanese cuisine with a fresh perspective, I recommend this restaurant.

Wine list
I ordered a recommended wine not on the wine list, the Glücksjäger Sauvignon Blanc Fumé 2020, a German natural wine.
I also ordered the Judith Beck Koreaa,
a natural wine made in Austria from the menu. Couldn't resist trying as korean this Koreaa made in Austria, but label feels a bit North Korean style.
Grilled Oyster with fermented lychee, roasted ginger oil , and Macadamia
Scallion pancakes (Cong You Bing, 葱油饼)
Dry Aged duck with fermented Gooseberries and black shallots.
